Matanza means "slaughter" in Spanish and this fascinating documentary from Mallorca shows how it's done.

Pig killings are a part of life for lifestock owners there and here a narrator talks us through the process - from the cutting of the pig's throat to the preparation and eating of the meat.

"Nothing is wasted," says narrator Mateo - and he's right, with everything, including the small intestine and skin being used. As a snapshot of a culture, Helen Graham's film is an interesting one - though a word or two more on what the slaughter means to each family and community would have added to the overall effect.

Educative and compelling - but it might well put you off sausages for life.
